Recipe: Super easy one-bowl muffins

Wanting to whip up something super quick? This is an easy and versatile muffin recipe – 30 minutes from start to finish.

It works every time, it’s quick, uses ingredients you already have, creates hardly any dishes and is delicious. They can be adapted for breakfast, lunch, school lunchboxes, after school snacks, sides for soups and stews, fancy high teas and everything in between. It’s a basic, simple recipe to get the kids involved. Oh yes, and they freeze well!

Basic muffin recipe

¼ cup olive oil
1 egg
1 cup milk
2 cups self raising flour

  1. Preheat oven to 180 degrees celsius
  2. Grease a 12 cup standard muffin pan
  3. Pour olive oil into a large mixing bowl, add egg and milk and whisk
  4. Add any additions – see below
  5. Add self raising flour (I don’t bother sifting)
  6. Using a spatula, mix lightly into a lumpy batter
  7. Using 2 spoons, scoop into muffin pan
  8. Bake for 25-30 minutes

The key to a fluffy muffin is using a large mixing bowl and not over-mixing the ingredients. The mix should be lumpy. As soon as the flour is incorporated, STOP. It only takes a few more stirs to toughen up the mix.

The above recipe produces a plain muffin that can be flavoured to either sweet or savoury. For sweet muffins, you can add sugar or sweetener of your choice. For savoury muffins, add seasoning if you wish.

Additions

These are limited only by your imagination, or by what is lurking in your fridge and pantry. I make these muffins to use up random bits from the fridge or even leftovers. Here are some ideas to get you started:

Sweet

  1. Mashed ripe banana, with or without chopped dates, walnuts, cinnamon or peanut butter
  2. Dark and/or white chocolate chips
  3. Add cocoa powder for chocolate muffins, with or without choc chips, morello cherries, orange zest, banana or blueberries
  4. Grated apple with sultanas and cinnamon
  5. White chocolate and raspberry
  6. Add a dollop of jam to the centre of each muffin
  7. Dessicated coconut and juice and zest of one lime
  8. Lots of blueberries
  9. Chopped tinned pineapple
  10. Hundreds and thousands for rainbow muffins

Savoury

  1. Cheese with or without blanched, chopped spinach, herbs, cayenne pepper, caramelised onion, pesto or mango chutney
  2. Chopped leftover roast vegetables
  3. Crispy bacon and corn or caramelised leek
  4. Blue cheese, walnut and grated firm pear
  5. Olive with fetta cheese or chopped salami
  6. Chopped ham and grainy mustard
  7. Pesto and chopped sun dried tomatoes
  8. Grated carrot & zucchini (squeeze out excess liquid)
  9. Finely chopped baby spinach and ricotta cheese
  10. Crispy chorizo and roasted capsicum
